I may or may not have had cake for breakfast today…
If you’re looking for something fun to make this week for the Fourth of July, take a look at this berry trifle. Orange cake layered with vanilla custard, fresh fruit and whipped topping— it doesn’t get any better than this!
BERRY TRIFLE
For the cake:
- 1 cup vegetable oil
- 1 cup sugar
- 1 cup orange juice or milk
- 3 eggs
- Vanilla extract
- Zest from 1 orange
- 1 tbs baking powder
- 2 cups of flour
- Sprinkle of nutmeg and cinnamon (Optional, but so worth it)
Combine ingredients and bake in a 9×13 in pan at 350 degrees fahrenheit for about 25 minutes or until done.
For the custard:
- 1- 3.5 oz package of vanilla pudding mix
- 1- 8oz container of whipped topping
Follow the package instructions for making the pudding. Put in the fridge until set. Once set, fold half of the whipped topping into the pudding mix until it’s all combined. Chill in the fridge until you’re ready to assemble your trifle.
Assembling the trifle:
- Orange cake, cooled and sliced thinly
- Vanilla custard
- The rest of the whipped topping
- Your fresh fruit of choice, washed and sliced
In a large bowl or trifle dish, layer your cake slices, custard and fresh fruit until you reach the top of your bowl. Top with whipped topping and more fresh fruit. Cover and place in the fridge until you’re ready to enjoy!
